In my mind, there are really only two. Either 2087 with the initial set or 2119 with New Beginning.
I think 2087 is the way to go, sure you're all the way back at the beginning, but the history you create and the time and enjoyment you'll get out of playing are well worth it. If Early Classics was still available, I'd go one step further and suggest you start all the way back at 2074.
Of course, I know a lot of folks want to be "current", but honestly, when I started my 2112 fed in efforts to get caught up, I played through about 2 game years and stepped away for quite a time. For me there's something nice about playing at my own pace and creating the history of a fed that I'll keep playing until I can't roll the dice any longer :-)
That being said, anywhere you want to jump in, it's up to you promoter... Pick a year that sounds most exciting to you and get the necessary cards and go for it!

Okay, but I am still a bit confused....So if I just pick a year, is there a storyline and guidebook I can follow? And what wrestler game packs do I need to play the said storylines?

I really like the newer color cards and my daughters do too, so to get them involved, perhaps someone can tell me which color card sets I should get/need?

I go with 2125 at this point. You might not have every known name, but most of the guys will be replaced soon enough. 2125 on is in color

If you want to play online, all cards are in color.
If you want physical cards, the sets aren't in color until 2125 as Troy said.
If you want to start at an official starting point and can stomach the black and white (I prefer it, myself), then you want either the 2087 or 2119 sets. Those sets have the manuals, charts, character guides and storyline kickoffs in the box.

And there's a set of extra color cards that's for sale that features those b&w characters on the current roster who's been colorized. Like the cool endgame card for example.
