I've been hovering around this website for a few months now and really want to get into CotG but I cannot find any real information about where to start and what the story arcs are and their chronology.
Could someone please help me figure out what I need to buy and in what order?

If you make an online account, it will give you access to CotG and Legends wikis. Here you can research the sci-fi fiction of CotG by sets and wrestlers or real life wrestling of Legends. If your interested in CotG then I would advise starting with the 2087 set, where you can learn from the beginning the rich history of the game and wrestlers. If you want more modern age of CotG then 2119 or 2125 are great starting points. I would click on the image that says "Play Online" and make an account and hit the wikis for some reading and research. Plus, be sure to hit up the player run feds here on the boards for ideas and what the game is about.

I lean towards 2125 if you're going physical. If you're going digital then you can open yourself to 87, 19, or 25.

That depends on what you want out of your experience. You have 3 starting points with 2087, 2119 and 2125. Some people would argue Early Classics which is 2074 but I don't believe you can find all of those items anymore.
So let's talk about 2087. You like old school wrestling? You'll get it here. This is 80s wrestling at it's finest. The benefit to 2087 is there is literally 40+ sets in front of you and you can run a promotion for almost 50 years of time. All of the characters will be there for you and you can get a feel for the game as it evolves and Tom figures out the mechanics. The one minus to this approach is, you're probably going to be behind forever if that bothers you and the roster quickly explodes to 70+ wrestlers and stays that way for a really long time. Some sets are also out of print if you're thinking of going physical.
2119 is the New Beginning era. This came about when Tom decided to give fans a jumping on point. The roster was cut down to a much smaller size and stayed that way. You get some really well developed characters out of the gate in this era. There's also a more elaborate story telling for this era of the game. This version of the game feels very modern day compared to 2087. I will say the minus to this version is you miss context with a lot of characters and the heavy roster turnover of this era means you will lose guys mid story sometimes or before you can really enjoy them. I would say the average career gets cut down from 10 years to like 4-5 years. That can be good or bad depending on what you want.
2125, this is when the game went to color cards. The big benefit here is that the color cards are awesome. The roster for this set is better fleshed out than 2087 or 2119. You have just enough guys to keep it interesting for a weekly TV show promotion. This set will also only have you behind by about 7 sets so you would be able to contribute to online discussion more. I also think storylines like Black Death are really fun and I think you would really enjoy how that unfolds. The bad part about this is, it's going to be more money up front for you. This is going to run you $50 instead of the $20 or $15 that the other two sets would run you. So keep that in mind, you could get several sets for the price of 2125. I will also add that 2126 is a bit of a disappointment as a set and you'll have to get through that year to get to the cool Black Death stuff.
My personal advice would be to get either 2087 or 2125. You can't go wrong either way but I think either go with the original set or the latest jumping on point. You can skip 2119-2124 and not feel like you missed out on a lot.

I say 2087 because that's what I did, and I loooove it. I will be jumping on board with 2125 someday.

There is a newer slightly updated color box set of the same game too if you prefer color. Simply put, this is where the magic started for us all. You will love it. FG has put out A LOT of amazing games. Just an update: I bought the big set that contained 2125, Council of War, and all three Black Death sets. I also picked up the FTR set.
