Couple things:
I NEVER use the DQ on the deathjump chart. Ever. It's been like 20 years since someone was DQ'ed for climbing the ropes.
For the choice chart, I use it 1/2 the time, and use the move on the card the other half... add more variety.

I don't change match outcomes, but like others have noted, will adjust what happens on the charts to what makes sense. I will roll on the Feud Table when a match ends in doubles, but reserve the right to ignore the result if it makes no sense.
There have been two LOW matches where I would have cheated to get a specific result. Both were "Loser Leave Town" matches, and I knew who was leaving. I still rolled the matches to see what happened. One went the way I had hoped and the other needed a little help (2 additional pin saves) to get the "correct" ending. Now I won't book that stip unless I have a plan for any possible outcome.

Just posting to put myself on the guilty side of the equation as well. Pretty much everything that's been said here, I've done as well at one point or another.
I don't have even a tinge of regret either.

In my LOW fed Major League Wrestling (MLW), the match outcomes are completely dependent upon the dice rolls.
I never change a match result even though sometimes I really wanted the match to end the opposite way- I just try to be creative and come up with an explanation (i.e. the losing wrestler got distracted when his feuding enemy showed up at ringside- at which point he got nailed with the particular move rolled for by the dice that caused him to lose the match, etc) for a surprising or disappointing outcome. And sometimes an unfortunate result can actually be turned into a positive depending upon how it is explained or thought out.
And if a wrestler gets DQd then he gets DQd- but I might change (to something like a smash on the head from a steel chair) the reason from the one stated on the chart as to why he got DQd.
For injuries, I make a wrestler roll doubles two times in a roll to get injured. I still have some injuries (right now Sabu and Ox Baker are on my injured list) but it cuts down on them for sure.
