I've been putting this off for a while, but I really want to get into COTG, but I don't want to have to buy a ton of stuff to get the entire storyline, so what I'm asking is: What's absolutely needed to start playing?
I'm a fan of Mixed Martial Arts, so CPC/POW looks really good to me, where should I start there? And is it part of the rest of the COTG universe, or a separate one all its own?

If you want to start with COTG and want to be part of the current storylines, generally New Beginning is the best place to start. If you want to try the MMA system in POW, then I say give the POW MMA Throwdown a look. Those are probably your 2 best bets.

I started playing POW this past summer and really enjoy it. The game mechanic is a bit different, but you catch on very quickly and Mark Ashby and others were very helpful with learning the ins and outs. I might be wrong, but I think the MMA Throwdown set is $13. If you want to skip drama and have an action packed UFC style fed POW is what you want.

As long as you know the main way to play a Filsinger Games wrestling product, then the MMA rules aren't too hard to follow. (He says this now, before the expected tweaks come with the next set -- HAHAHAHAHA!)
If you do happen to want to have the wrestling stats on cards for POW fighters, as well, then there's a Complete Throwdown package (I believe it's listed that way, anyway) which will give you both wrestling and MMA versions of the cards, plus the handbook, character descriptions, and all those goodies.
And should you go the MMA route, please feel free to ask if there's something you need clarification about. Darth Turkish or I will probably be the ones answering if one of our other knowledgeable board members here doesn't beat us to it. Have fun!

Yes, below the belt shots will no longer result in a ref stoppage.

I always recommend playing from 2087. I really enjoy the old cards and it is a different type of fed than New Beginnings and has more of an old school feel to it!

Now with that, do I get the charts for Striking/Grappling/Clinch (or whatever the three MMA charts are)? Because the site implies that I just get the cards/handbook, or are the charts in the handbook?

The charts are included in the "cards".

Yeah, as far as I know, there's no separate price for charts. You should get them included with the MMA cards.
