Anybody have any suggestions other than actually using a clock / stopwatch???

Using a stopwatch would make for some long matches. I'd probably just pick a number of falls (4 or 5, maybe) and the first person to score that many is the winner.

I never keep track of time except in Rumble-type situations (I use # moves to determine those).
Basically, once I get bored rolling a match, I call time. I've done Iron Man matches pretty much the same way.
One way to do it is when you reach the point where you feel like ending it, set a # of moves left. Say 15-20. I use one of those 20-sided countdown dice they use in Magic:The Gathering.
