I generally do not unless I make the time limit a big deal. If it is a 30 minute time limit match, 1 minute of real time equals 3 minutes match time.
The reason I generally do not keep track of time is I like the ability to call a snoozer of a match a draw or even call a great match a draw to build up excietment for future shows.

I use a timer and then multiply the time by 4. So a minute of real time is a 4 minute match.

It's all in my head. Depending on the fed, I go by how the match rolled out. If a match is really short: in old school matches, a headlock can last ten minutes in those days. In modern feds, a flash win is not that uncommon. Sometimes I will come up with a reason why it happened - usually a result of cheating (heel) or heel overconfidence (face). For longer matches I rarely have it go to a time limit. I like a result. But if it will push an angle, then a draw can work. I prefer to use my imagination.

I use a stopwatch and use real time. If a match goes the time limit, I roll 10 more moves (to signify the final 10 seconds of the time limit). If no one wins in those 10 moves, then it's a draw.

I keep track of the length of my matches by writing each dice roll in shorthand on a sheet of lined A4 paper. I can fit 5 columns on one sheet, so I've set 5 columns as the time limit.

I also use a stopwatch and enforce time limits on undercard matches. I used to do 10 minute time limits but it seemed like they always went to a draw so I moved to 15 minutes and have fewer draws.

With a stop watch . 1 minute stopwatch time , equals 3 mins realtime . Trust me NO ONE gets more abuse them me for my 0min18 or so matches !
