For the new fed I am working on, I am wanting to institute a TV Title with the old 15 minute time limit like Crockett had back in the day. However, I am pretty much drawing a blank on how to go about doing the timing of the matches.
So, my question is, how do you guys go about timing your matches, or doing time limits?

I use a stopwatch and keep one eye on it while I'm playing the match out. One second of real time equals two seconds of game time, so a 15:00 match (I use the same rule for my TV Title defenses) goes 7 minutes, 30 seconds.

How often do you hit the time limit?

I'd say probably one match in eight goes the distance.

My method is that each dice roll equals 6 seconds... Then to make things a bit more interesting, I add an additional 30 second to the match time for every fatigue token... Unless you play online, this would be extremely tedious... Fortunately, the game board log counts my dice rolls for me.

Usually I guesstimate my "official" times for matches. But my time limits are based more on the dice. If I keep getting the same results and my interest in the match lessens I just stop and say the match must end in the next ten moves or it's a draw. That way it renews excitement in the match for me if I'm playing alone or with my son.
I like that method so it works for me.

I just go by feel. If it feels like a match has gone about the right amount of time, I call it a draw but it rarely happens and sometimes it's just too epic to end that way.

I appreciate the input so far. I was always a fan of the competitive 15 minute match, especially when you had a great heel like Arn or Regal just barely hanging on those last few minutes to eek out the time limit draw and keep the title by the skin of his teeth. Then when someone finally did manage to get it away from them, it just felt like a huge deal.
Would love to find a way to replicate that in the game.
