I am very interested in GWFZ. However, I really don't know where to even start. Would somebody be willing to tell me what cards are based on real wrestlers?? I don't mean to offend anybody and say that these are not "originals." However, it is obvious that Freak Out is based on "Randy from Florida," and Big Superstar is of course based on that guy that the WWE won't mention anymore.
Has there ever been a card based on the Ultimate Warrior?

No. There has been no card made of the Ultimate Warrior for GWFZ. The closest thing that you're going to get to having him is Rob's Legends of Wrestlemania set that he made. All the guys in it are very well balanced and should add great talent for any LOW or Indy Fed of choice. A good starting point for playing the GWFZ should be with the first Promoter Madness set. That way, you will have a nice start. Tournament Master has all the complete info on how to order. But I got started playing the GWFZ with the first three Promoter Madness sets to get a nice roster going. That's my opinion, but of course it's up to you how you want to play your Z. That's the great thing about this game.
