Are six man (or other multiples) matches possible? Also, what about one time tag tag teams? Example: Pit Viper teaming with Pulsar.

Absolutely. There are no rankings for one time teams or 6 man teams, but you can use them. In the card editor, use the "multi-side" option, drag and drop your teams into the appropriate sides, and there you go.
As long as there are only two sides, you can sim them.

Also, not sure if you're asking this, but if using the Game Table to actually roll out your matches, you can essentially play any type of match that you could using the paper cards.

You can have them now. Create a Six Man Title using the "Manage Non-Official Titles" option under Customize. Then set up your tournament or whatever method you choose for assigning the title. You will need to write in the winners names (ala a faction belt).
