I'm thinking about getting some kind of paper cutter as I start printing/making my own cards. What do you guys use?

I use those ^^

Print card, line up the die (takes some practice, also use some tape to keep it from moving), then run through the cutter. Every card will be the same size.

Can’t remember the brand (big gray one). It was under $30. Still works great after an insane amount of use.
