If you were running a historical based fed ranging in the game years of say 1905 up to the current era, when would it be appropriate to switch the charts from the ones that came with legends 7 to the standard ones? I was guessing maybe around the years when guys like Rocca or Sputnik Monroe made a debut mid 1940's or so, but would love feedback from the community about this.

You could use the start of the TV era or whenever you bring in Gorgeous George. Say early 1950s.

Wrestling really started to get gimmicked up around the time of the Great Depression, when promoters got more desperate to attract fans' dwindling dollars with things like molasses battle royals and loser-rides-a-donkey matches. Also about when team matches started (though they weren't "tag team" matches at first, instead they were modern tornado matches). So that's another potential cutoff.

I've never actually tried tornado tag matches before despite playing this game on and off for over 30 years. I launched my tag division in the late 30's with Thesz/Strangler Lewis winning the belts in a 3 fall tourn final. Figured with the Fabulous Kangaroos coming into the picture within the next few years, it just made sense to get it going at that point. I do have the latest ringside companion though, if that match type is in there, I should at least try it.

This is a really fun idea that you're doing with your fed. Kudos my friend. I always love seeing the unique and creative ideas people use. This is a great one. I agree with Ty that the TV era is a great time to switch up those charts. Again, really cool idea!
