Swarm, my wife got me an air fryer for my birthday last year. I didn't know what I would think of it but I love it! I need to use it more often. We also rarely use our microwave. We had two but got rid of one. We keep the other in our downstairs bar but don't have to use it too often. I live off of chicken breasts in the air fryer. I either grill them up first in mass quantities then freeze them or buy pre-cooked and frozen in bulk at Sam’s or Costco. 3 at a time for about 15 minutes and it’s chicken heaven. Shrimp, bacon, pierogis, baked potatoes, chicken nuggets and fries for the kiddos all go in the air fryer. I also use my slow cookers religiously, but that’s another convo. Do you meal prep a lot? That's something I've been thinking about doing for the family, or at least for my wife and I. It can be hard to eat healthy when you have sports and activities 3+ nights a week.

But never for more than a day or two. I try to cook fresh as often as possible. Crock pots are great for your situation. Set it up, go do your stuff and come home to a warm meal.

I've been meal prepping for years but need a change with my chicken as baking not giving me the flavor grilling does.

I don't LOVE roasts but we make them once in a while.

There are number of various chicken recipes you can choose from. Meatballs is a good one we do a lot of. Again, lots of options with sauces you can go with there.

We may have to start having GCON at big outdoor national parks under tents where we can play and grill all day and night. Funny, Mike and I were talking yesterday about needing to do a big Gcon cookout. Make this happen in Chicago? 😉
