Are we only able to use official tag teams (Darkness Falls, The Specialists, etc.), or can we mix & match teams, i.e. Krypt & Grovel, Warfare & Lance At-las, etc.

If you want to mix and match you have to create a non official tag team and add them to the roster.

Also, if you just want to run a tag team match and not have the teams factor into the rankings, set up a multi-sided match in card editor and have one team as side one and the other as side two. This is the way to run the one-off type tag matches and not have to make someone like Murdok and Godsend or Shepard and Aegis an official team.

Does that kind of match count for a tag-team or singles or none on the standings page?

It doesn't count for anything. Only official tag teams are counted in the standings.

But I can make a custom tag-team and they are counted in the standings. I was just seeing where a "multi-sided" match was counted in the rankings. What if it was a three-way match or 4 way? Are these just not counted in the standings?

You'd have to test it for sure, but I believe it counts as a win for the winner and a lose for everyone else.
